For the life of me I can not change MPG to trip instead of from last reset. Manual says it is possible but never works when I try and change.

It's buried in the settings menu you access with the steering wheel, not the settings menu in the touch screen. Check out this video.
It's needlessly complicated but doable once you get a hang of how to maneuver through the menu.
